I'm hooked. it was so easy to make and so healthy. I made it for dinner with brown rice. My country boy husband gobbled it right up. I don't think he realized that I put him on a diet. :0).
I can't wait to try the other flavors.

LEMON & CORIANDER SOUP
         (nehaonline)

Message by nehaonline on 10/27/2009 1:19:39 PM
To make lemon coriander soup take 6 cups of water in a pan. Add to it, 2 to 3 whole lemon grass stalks and 1 or 2 vertically slit green chilies. Bring it to boil. Simmer till the mixture reduces to about 4 cups. Now, filter out the water. The stock is ready. Take a separate pan and heat 1 tsp oil in it. Add ¼ cup of diced cabbage, ¼ cup of sliced mushrooms, ¼ cup of sliced carrots, ¼ cup of diced red cabbage and ¼ cup of sliced spring onion whites to the heated oil and sauté for 2 to 3 minutes. Now, add the stock, a pinch of pepper and salt. Bring the mixture to boil. Simmer until the vegetables become soft. Now, add 1 tsp lemon juice and 2 tbsp spring onion greens. Garnish with 1 tbsp fresh coriander and serve hot.

To make a lemon grass substitutes squeeze 2 tsp lime juice in a bowl and add ¼ tsp granulated sugar and stir until the sugar dissolves. Then add ¼ tsp chopped ginger. And finally add 6-8 mint leaves finely chopped.

I am confused by the contest entry rules. I see that there is no limit to the number of mailed-in entries, but is the same true for on-line entries? Should we enter every day? I've been trying to win since last year's contest ;-)

Message by Steven on 8/13/2009 6:20:56 AM
I hadn't noticed there was a CD of Indian Classical music when I picked up a box of Petwa Halwa (one of my favourite desserts) but I was delighted to get it. Many thanks and a tip o the hat to the marketer who thought this up. It is a great idea and I will seek out all of the other dishes. When my wife and I are too tired to cook, a couple of times a month, we almost always have something from Kitches of India. Add some fresh vegetables, serve on rice, just about the best quick meal available.
