Brown bread is somewhat seasonal, being served mostly in winter and is frequently served with baked beans.
Ingredients :
500 gms whole wheat flour 100 gms millet flour (ragi) 25 gms wheat bran 30 gms fresh yeast 1 tbsp brown sugar 1½ tsp Aashirvaad salt 50 gms butter or margarine 2 tbsp curd 300-400 ml water
Method of Preparation :
Mix the wheat flour, the millet flour and the bran in a big bowl. Make a well in the center. Put the yeast, sugar and 2 tbsp water into the well and cover it with some flour. Wait for about 10 minutes until you see cracks on the surface. Add the remaining ingredients and knead thoroughly. The dough should be soft but not too sticky. Place it back into the bowl and cover it. Leave it in a warm place for 1-2 hours till it has risen to at least double its original size. Knead it again. Place it into a thick, oiled baking dish. Bake for approx. 40 minutes in a pre-heated oven at 200 degrees C. Serves : 2-3
