Apple pie is a dessert of enduring popularity, eaten hot or cold, on its own or with ice cream. A traditional way to serve apple pie is to serve it with cheese. This way of serving has given rise to the rhyme 'apple pie without cheese is like a kiss without a squeeze'.
Ingredients :
Crumb Topping
½ cup flour
½ cup brown sugar, packed
½ cup margarine
½ cup chopped nuts (optional)
Filling
½ cup sugar
1 tbsp cornstarch
½ tsp cinnamon
4 cups sliced and peeled apples
1 tbsp lemon juice
1 refrigerated pie crust for 9 inch pie
Method of Preparation :
Prepare the crumb topping and set aside. In a small bowl combine ½ cup flour and ½ cup packed brown sugar. Put in ½ cup of margarine in the pastry blender. Blend margarine until coarse crumbs form. If desired, add ½ cup coarsely chopped nuts at the end.
Combine sugar, cornstarch and cinnamon in a large bowl. Add apples and lemon juice; toss to coat. Unfold the crust. Place on a foil lined (or greased) cookie sheet. Spoon apples into center of crust, leaving a 2 inch edge.
Sprinkle crumb topping over apples. Fold up the edge of the crust, pinching at 2 inch intervals. Bake in 400 degrees oven for 15 minutes. Reduce temperature to 350 degrees and bake for 35 minutes (or until apples are tender).
