Making a Mutton dish can be a very tedious process, from getting your mutton to preparing your masalas. But it doesn’t have to be so difficult anymore. Shiela Kacker’s winning recipe (Delhi)
Make a batter of 100g gramflour, 1tbsp garlic paste, 1/2tsp red chilli powder, 1/2tsp ajwain, salt to taste, a pinch of elaichi powder and water. Dip boneless mutton pieces in it for 10-15 minutes. Heat 1/2cup oil in a non-stick kadhai and add the mutton pieces one by one. Deep fry the pieces and serve hot with chilli sauce.
Amrita Chauhan’s winning recipe (Jaipur)
Dice 100g boneless mutton in small pieces and sauté for two minutes. Mix 1tbsp cornflour, salt and water. Dip the mutton pieces in the mixture and deep fry. Finely chop 1/2 an onion, 1/2 capsicum and 1 green chilli. Sauté the chopped onions, capsicum and chilli, till they are golden brown. Add 1/4tsp red chilli powder, 1 tbsp soya sauce, 2 tsp vinegar, 1tbsp chilli sauce, 1tbsp tomato sauce. Mix well and add the sautéed mutton. Serve hot.
Cheryl Collaco’s winning recipe (Jabalpur)
Wash 500g mutton and place in a strainer for water to drain off. Take 2 large onions, 2 large tomatoes,
2tbsp ginger garlic paste,1tsp turmeric powder,1tsp red chilli powder, 2tsp jeera powder, 1/2tsp garam masala powder and a small bunch of dhania. Place all the above ingredients in a mixer and grind to fine paste. Heat 2tbsp oil in a pressure cooker and add the paste. Sauté for a minute and add mutton. Fry the meat and masala together till the oil separates. Add salt to taste and pour one cup of water. Pressure cook for another 15 minutes and serve hot with rice.
Shashi Sharma’s winning recipe (Pune)
Chop 4 onions, 1 tomato, 1 green chilli, a handful coriander and sauté the same in a pan. Add 1tbsp gingergarlic paste. Transfer the same to a pressure cooker and add 750g mutton.
Cook through two whistles. Let the steam escape, open the cooker and add salt to taste, 1tsp pepper and 1/2tsp garam masala. Cook through another whistle and serve hot with rice or roti.
